Irresistible walnut pumpkin roll recipe, a crowd favorite. Sprinkle with confectioners' sugar for a beautiful finish.
Ingredients:
  • 3 eggs
  • 1 cup white sugar
  • 0.66666668653488 cup canned pumpkin
  • 0.75 cup all-purpose flour
  • 0.5 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 0.5 cup chopped walnuts
  • confectioners' sugar for dusting
  • 0.75 teaspoon vanilla extract
  • 2 tablespoons butter, softened
  • 8 ounces cream cheese
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C). Grease a 15x10x1-inch baking pan, line it with parchment paper, and grease and flour the paper.
  • Beat eggs on high for five minutes in a large bowl. Gradually mix in white sugar and pumpkin. Stir in flour, cinnamon, and baking soda. Spread batter evenly in the prepared baking pan and sprinkle walnuts on top.
  • Bake in the preheated oven for 15 minutes or until cake springs back when lightly touched. Flip the cake onto a linen towel sprinkled with confectioners' sugar. Gently peel off the paper and roll the cake in the towel, starting from the short end. Allow it to cool.
  • Prepare a luscious filling by combining 1 cup of confectioners' sugar, vanilla, butter, and cream cheese until velvety smooth.
  • Gently unfurl the cake, generously spread the filling, leaving a 1-inch border, then roll the cake back up. Refrigerate until ready to serve. Sprinkle with extra confectioners' sugar for a finishing touch, if preferred.
