Impress with ease: Spiced pumpkin cake roll with divine vanilla cream cheese filling.
Ingredients:
  • 0.66666698455811 cup pumpkin puree
  • 3 large eggs, beaten
  • 0.75 cup all-purpose flour
  • 1 teaspoon baking soda
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar, or more to taste
  • 2 tablespoons butter, softened
  • 0.25 teaspoon vanilla extract
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and generously grease a 10x15-inch jelly roll pan.
  • In a mixing bowl, combine sugar, pumpkin puree, eggs, and cinnamon until smooth.
  • In a separate bowl, combine flour and baking soda. Blend the flour mixture into the pumpkin mixture until smooth. Spread the batter evenly in the prepared pan.
  • Bake in the preheated oven for 15 to 25 minutes or until the cake springs back when lightly touched. Let it cool for 5 minutes before serving.
  • Gently flip the cake onto a cotton tea towel. Roll the cake in the towel from a short edge, creating a jelly-roll shape. Let it cool with the seam side down for approximately 15 minutes.
  • While the cake cools, prepare the filling by mixing cream cheese, powdered sugar, butter, and vanilla in a bowl until smooth.
  • After the cake has cooled, gently unwrap and discard the towel. Evenly spread the filling over the entire cake surface. Carefully roll the cake into a log shape without the towel. Wrap it in plastic wrap and chill in the refrigerator until serving time.
  • Before presenting, delicately dust the roll with powdered sugar and cut it into 10 equal portions.
