Elevate your Halloween party with these delicious pumpkin cookies – the ultimate sweet treat!
Ingredients:
  • 1 1/2 cups butter, softened
  • 1 cup sugar
  • 1/2 teaspoon vanilla
  • 3 1/2 cups Gold Medal™ all-purpose flour
  • 1/4 teaspoon salt
  • 3/4 cup roasted salted hulled pumpkin seeds (pepitas), toasted
Instructions:
  • In a large bowl, use an electric mixer on medium speed for 1 minute to blend butter, sugar, and vanilla until smooth. Add flour, salt, and 1/2 cup of pumpkin seeds; mix well. Shape dough into a ball, flatten to 1-inch thickness, cover, and refrigerate for about 2 hours.
  • Preheat oven to 350°F and coat cookie sheets with cooking spray. Roll out dough on a floured surface to 1/4-inch thickness and use 2-inch cookie cutters to create desired shapes. Place cutouts on the sheets about 1 inch apart. Sprinkle with the remaining 1/4 cup of pumpkin seeds, gently pressing them into the cutouts.
  • Bake for 10-12 minutes until just set, then transfer to cooling racks right away.
