Decadent pumpkin soup recipe cherished for two decades - velvety, flavorful, and comforting.
Ingredients:
  • 36.40 gm Classic Olive Oil
  • 1 onion, finely chopped
  • 1 leek, white part only, finely sliced
  • 1 garlic clove, crushed
  • 1/2 tsp ground coriander
  • 2.50 gm ground cumin
  • 1/2 tsp freshly grated nutmeg
  • 1kg peeled pumpkin, diced
  • 1 large potato, peeled, diced
  • 1L chicken style liquid stock or vegetable liquid stock
  • 125ml cream
Instructions:
  • In a large saucepan, gently heat oil, then sauté onion and leek for 2-3 minutes until soft but not browned.
  • Sauté garlic and spices for 30 seconds. Add pumpkin, potato, and stock, bring to a boil, then reduce heat, cover, and simmer for 30 minutes. Allow to cool slightly before blending in batches.
  • Pour the soup back into the pan, swirl in the cream, and warm it up gently. Season with salt and pepper, and sprinkle a bit more nutmeg if you like.
