Creamy pumpkin soup infused with caramelized onions, garlic, and herbs for a velvety texture - a comforting delight.
Ingredients:
  • 1 cup chopped onion
  • 5 whole black peppercorns
  • 1 clove garlic, minced
  • 0.5 teaspoon chopped fresh thyme
  • 4 cups pumpkin puree
  • 6 cups chicken stock
  • 3 tablespoons pure maple syrup
  • 1.5 teaspoons salt
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cinnamon
  • 0.5 cup heavy whipping cream
  • 1 teaspoon chopped fresh parsley
Instructions:
  • In a large pot over medium-high heat, warm olive oil. Sauté onion until browned and softened, for about 10 minutes. Add peppercorns, garlic, and thyme. Keep stirring until fragrant and slightly browned, approximately 2 minutes.
  • Cook the pumpkin puree until it deepens in color for about 5 minutes. Add chicken stock, maple syrup, salt, nutmeg, and cinnamon. Simmer on medium-low heat for 30 minutes until slightly reduced and the flavors blend beautifully, stirring occasionally.
  • Blend soup in batches in a blender, venting steam. Blend each batch for about 30 seconds until smooth. Pour back into the pot, add heavy cream, and heat through for about 4 minutes over medium heat.
  • Stir in heavy cream to the pot of soup and heat over medium heat until warmed through, about 4 minutes.
  • Serve the soup and top it off with a sprinkle of fresh parsley.
