Indulge in flavorful homemade pumpkin spice bagels with a blend of pumpkin puree and warm spices for a perfect autumn delight.
Ingredients:
  • 1 (.25 ounce) envelope active dry yeast
  • 0.66666668653488 cup warm water (110 degrees F/45 degrees C)
  • 0.75 cup canned pumpkin
  • 0.33333334326744 cup packed brown sugar
  • 1.5 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 0.75 teaspoon ground nutmeg
  • 0.5 teaspoon ground allspice
  • 0.5 teaspoon ground cloves
  • 3 cups all-purpose flour, or more as needed
  • 1 tablespoon cornmeal
  • 6 cups water, or more as needed
  • 1 teaspoon white sugar

Instructions:
  • In a large bowl, combine warm water and yeast until dissolved. Add pumpkin, brown sugar, cinnamon, salt, nutmeg, allspice, and cloves, then mix thoroughly. Gradually incorporate enough flour to form a soft dough. Knead the dough by hand for 6 to 8 minutes or mix in a stand mixer. Transfer the dough to a greased bowl, cover with a damp towel, and allow it to rise in a warm place until doubled in size, about 1 hour.
  • After punching the dough down, shape it into 8 balls and gently poke a hole in the center of each one to form a bagel shape. Place the bagels on a baking sheet and allow them to rise for 10 to 15 minutes.
  • In a large pot, combine 6 cups of water and white sugar. Bring to a boil. Gently press down on the bagels to slightly flatten them. Carefully lower a couple of bagels at a time into the boiling water and cook for 1 1/2 minutes. Flip the bagels and boil for another 1 1/2 minutes. Using a slotted spoon, remove the bagels and place them on a clean towel to dry. Repeat the process with the remaining bagels.
  • Preheat the oven to a toasty 400 degrees F (200 degrees C). Give a baking sheet a quick spritz with cooking spray and a sprinkle of cornmeal. Place the bagels on the baking sheet, giving them some space to shine about 2 inches apart.
  • Bake in the preheated oven for 25-30 minutes or until fully cooked.
