Delicious pumpkin spice cake loaded with pecans, ideal for fall festivities. Top it off with cream cheese frosting for an extra special touch!
Ingredients:
  • 3 cups all-purpose flour
  • 3.5 teaspoons ground cinnamon
  • 2 teaspoons baking soda
  • 1 teaspoon ground nutmeg
  • 0.5 teaspoon ground ginger
  • 1.25 cups shortening
  • 1.25 cups white sugar
  • 1 cup packed brown sugar
  • 2 large eggs, beaten
  • 0.5 cup chopped pecans
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C), then generously grease and flour a 10-inch Bundt pan.
  • Combine and sift flour, cinnamon, baking soda, salt, nutmeg, ginger, and allspice. Set aside.
  • In a large bowl, use an electric mixer to cream the shortening, both sugars, and eggs until light and fluffy. Add pumpkin purée and mix well. Gradually incorporate the flour mixture until fully combined. Stir in chopped pecans and pour the batter into the prepared pan.
  • Bake in the oven until a toothpick inserted in the center of the cake comes out clean, for 60-65 minutes.
  • Once finished baking, allow the dish to cool in the pan for 10 minutes before transferring it onto a wire rack to cool completely.
