Pumpkin spice cake with cinnamon cream cheese frosting.
Ingredients:
  • 1 (15 ounce) can canned pumpkin puree
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon ground nutmeg
  • 1 (15.25 ounce) package yellow cake mix with pudding
  • 0.25 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 4 (3 ounce) packages cream cheese, softened
  • 0.5 cup butter, softened
  • 2 cups confectioners' sugar
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) and generously grease a 9x13-inch baking dish.
  • Combine pumpkin, cinnamon, cloves, and nutmeg in a large bowl, whisk until blended. In another large bowl, mix cake mix, eggs, and oil until smooth. Gently fold in pumpkin mixture and vanilla. Transfer batter to the baking dish.
  • Bake in the preheated oven for about 40 minutes or until a toothpick comes out clean from the center of the cake. Cool completely on a wire rack.
  • Prepare the frosting by whipping cream cheese and butter together in a bowl with an electric mixer until fluffy. Gradually mix in confectioners' sugar until smooth, then fold in cinnamon and vanilla for added flavor.
  • Frost the cake once it has cooled.
