Moist pumpkin sheet cake spiced with cinnamon, nutmeg, and cloves, filled with chopped walnuts, and topped with a creamy cinnamon-cream cheese icing. Ideal for fall festivities.
Ingredients:
  • 0.25 cup butter, melted
  • 0.66666668653488 cup milk
  • 3 drops apple cider vinegar
  • 0.66666668653488 cup packed brown sugar
  • 0.66666668653488 cup vegetable oil
  • 0.5 teaspoon vanilla extract
  • 1 cup canned pumpkin puree
  • 2 cups all-purpose flour
  • 0.5 cup regular rolled oats
  • 1.25 teaspoons baking powder
  • 1.25 teaspoons baking soda
  • 0.25 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.125 teaspoon ground cloves
  • 0.5 cup chopped walnuts
  • 1 (16 ounce) container cream cheese frosting
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and lightly grease a 9x13 inch baking dish. In a small bowl, mix the milk and vinegar together, and set aside.
  • Combine the flour, rolled oats, baking powder, baking soda, cinnamon, nutmeg, and cloves in a bowl.
  • In a mixing bowl, combine white sugar, brown sugar, vegetable oil, butter, milk mixture, and vanilla. Beat until smooth and well blended. Add pumpkin and beat until smooth. Gradually stir in the flour mixture until evenly blended. Mix in walnuts, then pour the batter into the prepared baking dish.
  • Bake until the top is golden brown and a toothpick inserted in the center comes out clean, around 45 minutes. Cool on a rack.
  • Combine the frosting with a hint of cinnamon in a bowl. Once the cake has fully cooled, generously spread it over the top.
