Spiced pumpkin coffee cake with cinnamon sugar coating for irresistible flavor.
Ingredients:
  • cooking spray
  • 1 tablespoon cinnamon sugar, or as needed
  • 1.5 cups white sugar
  • 0.75 cup butter, at room temperature
  • 3 eggs
  • 1.5 teaspoons pumpkin pie spice
  • 2.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 cup sour cream
  • 0.5 cup brown sugar
  • 2 tablespoons ground cinnamon
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C). Grease a 10-inch fluted tube pan (such as Bundt®) with cooking spray and sprinkle with cinnamon sugar.
  • Cream sugar and butter in a large bowl with an electric mixer until fluffy. Gradually mix in eggs one at a time. Stir in pumpkin pie spice and vanilla extract until fully combined.
  • Combine the flour, baking powder, and baking soda in a separate bowl. Gradually mix in the dry ingredients and sour cream into the egg mixture, alternating between the two and starting and finishing with the flour mixture.
  • Combine brown sugar and cinnamon in a small bowl. Spread 1/3 of the cake mixture into the pan. Sprinkle half of the brown sugar mixture on top. Repeat layers.
  • Preheat the oven and bake for 8 minutes. Then lower the temperature and bake for an additional 40 minutes until a toothpick inserted into the center comes out clean.
  • Take out of the oven and allow to cool for 10 minutes prior to transferring to a plate.
