Delicious pumpkin spice cupcakes with cinnamon cream cheese frosting, perfect for gatherings in the fall!
Ingredients:
  • 2.5 cups white sugar
  • 0.75 cup butter, softened
  • 1 (15 ounce) can solid-pack pumpkin puree
  • 2.3333332538605 cups all-purpose flour
  • 1 tablespoon pumpkin pie spice
  • 1 tablespoon ground cinnamon
  • 0.75 teaspoon baking powder
  • 0.5 teaspoon ground ginger
  • 1 (8 ounce) package cream cheese, softened
  • 0.5 cup butter, softened
  • 4 cups confectioners' sugar
  • 2 teaspoons ground cinnamon
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare 24 muffin cups with paper liners.
  • Using an electric mixer, blend white sugar and 3/4 cup butter together until smooth and creamy in a bowl. Add eggs one at a time, mixing well after each addition. Incorporate pumpkin into the creamy butter mixture.
  • Combine flour, pumpkin pie spice, 1 tablespoon cinnamon, baking powder, and ginger in a bowl. Gradually mix into the creamed butter along with buttermilk until the batter is smooth. Fill muffin cups 3/4 full with the batter.
  • Bake in the preheated oven for 20-25 minutes or until a toothpick inserted in the center of a cupcake comes out clean. Let cool in the muffin tin for 10 minutes before transferring to a wire rack.
  • In a bowl, use an electric mixer to whip together cream cheese and 1/2 cup butter until fluffy. Mix in confectioners' sugar, 2 teaspoons cinnamon, and vanilla extract until frosting is smooth. Frost each cupcake generously.
