Fall-flavored pumpkin spice sugar cookies, a delightful blend of pumpkin pie and soft sugar cookies.
Ingredients:
  • 2.25 cups white sugar, divided, or as needed
  • 1.5 cups butter, softened
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3.5 cups all-purpose flour
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon baking powder
  • 1 teaspoon salt

Instructions:
  • In a large bowl, use an electric mixer to cream together 2 cups of sugar and butter until smooth. Add eggs and vanilla, and continue to beat until creamy.
  • Combine flour, pumpkin pie spice, baking powder, and salt by sifting. Mix the flour mixture into the butter mixture until fully combined. Refrigerate covered until chilled, for at least 1 hour.
  • Preheat the oven to 375°F (190°C) and lightly coat baking sheets with cooking spray.
  • In a shallow bowl, sprinkle the remaining 1/4 cup of sugar. Fill a separate small bowl with water.
  • Spoon dough onto baking sheets, leaving 2 inches between each. Dampen the bottom of a glass with water, then coat it in sugar. Use the sugared glass to gently flatten each cookie, reapplying water and sugar as needed.
  • Bake in the preheated oven for 5-7 minutes until perfectly set.
