Delicious pumpkin spinach muffins: a healthy treat for the whole family, made with canned pumpkin, oats, and spices.
Ingredients:
  • 2 cups canned pumpkin
  • 0.5 cup olive oil
  • 0.25 cup maple syrup
  • 3 large eggs
  • 1 cup whole wheat flour
  • 1 cup rolled oats
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 cup frozen spinach, thawed and drained
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare two 12-cup muffin tins with paper liners.
  • In a large bowl, blend together pumpkin, oil, maple syrup, and eggs until fully mixed.
  • In a small bowl, mix together flour, oats, baking powder, baking soda, cinnamon, and nutmeg. Stir this flour mixture into the egg mixture. Fold in spinach until evenly distributed throughout the batter.
  • Fill the muffin tins with batter, leaving space at the top, and make sure each cup is about 2/3 full.
  • Bake in the preheated oven for 20 minutes until the tops spring back when lightly pressed. Cool for 10 minutes before removing from the tins and allow to cool to room temperature before serving.
