Delicious pumpkin muffins with sweet, crunchy streusel - ideal for breakfast or a snack.
Ingredients:
  • 4 large eggs
  • nonstick cooking spray
  • 0.5 cup rolled oats
  • 0.5 cup chopped walnuts
  • 0.5 cup brown sugar
  • 4 tablespoons cold butter, cut into pieces
  • 4 cups canned pumpkin puree
  • 1.6666667461395 cups white sugar
  • 0.66666668653488 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon ground cloves
  • 0.25 teaspoon ground ginger
  • 0.25 teaspoon ground allspice
  • 0.25 teaspoon ground cardamom
  • 0.5 cup coarsely chopped walnuts
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) while lightly greasing only the bottoms of three 12-cup muffin tins with cooking spray.
  • In a bowl, mix oats, walnuts, brown sugar, and flour. Add cold butter and blend with a pastry blender or fork until mixture is crumbly. Refrigerate streusel topping until needed.
  • In a large bowl, combine pumpkin puree, sugar, oil, eggs, and vanilla extract. Add flour, baking soda, salt, cinnamon, baking powder, cloves, ginger, allspice, and cardamom; mix well. Gently fold in walnuts. Fill muffin cups halfway with batter and sprinkle streusel topping evenly on each muffin.
  • Bake in the oven until a toothpick inserted in the center comes out clean, about 20-25 minutes. Allow to cool in the tins for 5 minutes before transferring to a wire rack to cool completely.
