Moist pumpkin-pecan bread with applesauce, chocolate chips, and cozy fall spices.
Ingredients:
  • 0.33333334326744 cup whole wheat flour
  • 0.25 cup whole wheat flour
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.25 teaspoon ground ginger
  • 0.25 teaspoon ground cloves
  • 1 cup pumpkin puree
  • 1 cup white sugar
  • 0.5 cup applesauce
  • 2 eggs
  • 0.5 teaspoon vanilla extract
  • 0.33333334326744 cup toasted chopped pecans
  • 0.25 cup mini chocolate chips
Instructions:
  • Heat the oven to 350 degrees F (175 degrees C) and generously grease a 9x5-inch loaf pan.
  • In a medium bowl, mix together all-purpose flour, 1/3 cup plus 1/4 cup whole wheat flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves.
  • Blend pumpkin, sugar, applesauce, eggs, and vanilla extract with an electric mixer until smooth. Fold in pecans and chocolate chips until incorporated. Transfer mixture to the prepared pan.
  • Bake in the oven until a toothpick inserted in the center comes out clean, about 50-55 minutes. Allow to cool in the pan for 15-20 minutes before transferring to a wire rack to cool completely.
