Chocolate Pecan Pumpkin Bread

Whip up quick and delicious chocolate pumpkin bread with pecans and chocolate chips for instant autumn bliss!
Ingredients:
  • 0.5 teaspoon baking powder
  • 1.5 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 2 cups canned pumpkin
  • 2.5 cups white sugar
  • 1 cup vegetable oil
  • 4 beaten eggs
  • 1 cup chopped pecans
  • 1 cup miniature chocolate chips
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and generously grease two 8x4 inch loaf pans.
  • Combine the flour, baking soda, baking powder, cinnamon, nutmeg, and salt by sifting them in a bowl.
  • In a separate bowl, mash the pumpkin and mix in the sugar, oil, and eggs. Add the flour mixture to the pumpkin mixture and gently stir to combine. Fold in the pecans and chocolate chips using a rubber spatula. Gently mix by running the spatula through the center and around the sides of the bowl until well incorporated.
  • Pour the batter into the loaf pans, leaving 1/4 empty to allow room for rising. Bake in the preheated oven for 20-25 minutes until the bread is golden and a toothpick comes out clean. Let it cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
