Chef John's pumpkin-shaped dinner rolls: Buttery, sweet and impressive for Thanksgiving.
Ingredients:
  • 1 cup warm milk
  • 1 (.25 ounce) package active dry yeast
  • 1 tablespoon honey, or more to taste
  • 4 tablespoons melted butter
  • 1 teaspoon fine salt
  • 3 cups all-purpose flour, or more as needed
  • kitchen string (4 per roll)
  • vegetable oil, or as needed
Instructions:
  • In a bowl, mix warm milk, yeast, honey, and butter. Stir in salt and the majority of the flour, saving some for dusting. Use a wooden spoon to stir until a sticky dough forms.
  • Sprinkle the work surface with the remaining flour. Work the dough until it becomes smooth, stretchy, and not sticky, adding extra flour if necessary. Shape the dough into a ball that gently bounces back when touched.
  • Place the dough in a lightly greased bowl, cover with greased foil, and allow it to rise in a warm spot until it doubles in size, approximately 1 1/2 hours.
  • Cut kitchen string into 48 strands measuring 8 to 10 inches each. Toss the strings in a bowl with oil until coated, and set aside.
  • Flatten the risen dough on a work surface; set aside 3 to 4 tablespoons for making "stems." Divide the rest of the dough in half, then cut each half into 6 wedges. Shape each wedge into a round ball by gently cupping your hand over the dough and rolling in a circular motion for 10 to 15 seconds. Cover and allow to rest for 15 minutes.
  • Preheat your oven to 375 degrees F (190 degrees C) and prepare 2 baking sheets with silicone liners.
  • Lay 4 strings in a star shape on your work surface. Put the dough ball, smooth side-down, in the center. Tie each string into a knot over the roll and trim off any excess with scissors.
  • Arrange the tied roll on a lined baking sheet with the knot side facing down. Repeat with the rest of the strings and dough balls.
  • Allow the rolls to proof for approximately 30 minutes.
  • Lightly dust the rolls with a sprinkle of flour. Shape the remaining dough into "stems" and arrange them on the baking sheet with the rolls.
  • Bake in the preheated oven until golden brown, for 20 to 25 minutes.
  • Take out of the oven and allow to cool until comfortable to touch, approximately 15 minutes. Remove any strings from the tops of each roll and carefully peel down. Make a small hole in the tops of the rolls and insert the "stems". Move the pumpkin rolls to a serving platter.
