Halloween Pancakes

Whip up quick pumpkin-shaped pancakes using Bisquick™ mix, top with orange syrup for a sweet fall breakfast or fun dinner twist. Ready in 20 minutes!
Ingredients:
  • 2/3 cup real maple syrup
  • 1/3 cup light corn syrup
  • 2 tablespoons butter
  • 1/8 teaspoon Betty Crocker™ orange gel food color
  • 1 cup half-and-half
  • 2 tablespoons lemon juice
  • 2 cups Bisquick™ Original Pancake & Baking Mix
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • 2 eggs, separated
  • 1 teaspoon vanilla
  • 1 cup semisweet chocolate chips (6 oz)
Instructions:
  • In a small saucepan, warm maple syrup, corn syrup, and butter over gentle heat until butter has melted. Off the heat, blend in the food color. Reserve for later use.
  • Combine half-and-half and lemon juice in a large bowl, allowing it to sit for 2 minutes. Mix in Bisquick, sugar, baking powder, egg yolks, and vanilla until well blended. Gently fold in chocolate chips. In a separate bowl, beat egg whites until soft peaks form, then carefully fold into the batter.
  • Preheat griddle to 350°F or warm a 12-inch nonstick skillet over medium heat and grease with melted butter. Place the pumpkin pancake mold on the griddle, handle side up, and heat until hot.
  • Pour 1/3 cup of batter into a mold on a hot griddle for each pancake. Cook until bubbles break on the surface and edges start to dry. Remove the mold, flip the pancake, and cook for about 1 minute until golden brown. Serve with orange syrup.
