Elevate your holiday treat with these irresistible puppy chow truffles, blending rich peanut butter and chocolate with a satisfying crunch for a truly decadent experience.
Ingredients:
  • 3 cups crispy peanut butter cereal squares, such as Peanut Butter Chex™
  • 3/4 cup confectioner’s sugar, divided
  • 1 cup smooth peanut butter
  • 2 cups semi-sweet chocolate chips
  • 1 teaspoon coconut oil
Instructions:
  • Place the Chex cereal in a large plastic bag and crush into fine pieces using a rolling pin.
  • Mix together the 3 cups of crushed Chex, 1/2 cup of confectioner’s sugar, and peanut butter in a large bowl until well blended. Chill the mixture in the freezer until firm, approximately 30 minutes.
  • In a microwave-safe bowl, melt semisweet chocolate in 10-second intervals until smooth, stirring each time. Stir in coconut oil until well combined.
  • Prepare a baking sheet with parchment. Use a 2 teaspoon cookie scoop to form the peanut butter mixture into 1-inch balls. Roll them between your hands to shape and place them on the lined baking sheet.
  • Skewer truffles with a wooden pick or fork and dunk them in the warm, melted chocolate. Return them to the parchment-lined baking sheet. Chill in the refrigerator until the chocolate sets, approximately 20 minutes.
  • Gently coat truffles with the remaining 1/4 cup of confectioner's sugar before serving.
