Whip up a delicious puttanesca pasta for a quick and easy meal perfect for busy weeknights cooking for one or two.
Ingredients:
  • 56.88 gm olive oil
  • 2 garlic cloves, finely chopped
  • 1 small red chilli, deseeded, finely chopped
  • 6 vine-ripened tomatoes, roughly chopped
  • 125.00 ml kalamata olives
  • 6 anchovy fillets, drained, roughly chopped
  • 30.00 ml small capers, drained
  • 82.50 ml flat-leaf parsley leaves, roughly chopped
  • 125.00 ml small basil leaves
Instructions:
  • In a large frying pan over medium heat, warm up oil. Add garlic and chilli, stirring occasionally, for 1 minute. Next, add tomatoes and cook, stirring frequently, for 5 minutes.
  • Combine olives, anchovies, and capers in the pan and sauté for 5 minutes. Stir in fresh parsley and basil, then season generously with salt and pepper.
  • Combine the flavorful puttanesca sauce with the pasta over gentle heat until fully mixed. Then, plate and enjoy your delicious dish!
