Whip up homemade puttanesca sauce effortlessly!
Ingredients:
  • 18.20 gm olive oil
  • 1 medium brown onion, finely chopped
  • 5 anchovy fillets, chopped
  • 1 small red chilli, finely chopped
  • 40.00 ml drained capers
  • 44.40 gm tomato paste
  • 2 x Mutti Polpa Finely Chopped Tomatoes 400g
  • 165.00 ml kalamata olives, roughly chopped
  • 62.50 ml roughly chopped fresh flat-leaf parsley leaves
  • Cooked pappardelle pasta, to serve
Instructions:
  • In a saucepan over medium heat, warm up oil. Add onion, garlic, anchovy, chili, and capers. Cook, stirring occasionally, for 5 minutes until the onion softens.
  • Stir in the tomato paste and cook for 1 minute. Pour in the tomatoes and bring to a boil. Lower the heat and simmer for 10 to 15 minutes until the sauce slightly thickens. Mix in the fresh basil.
  • Just before serving, enhance the sauce with olives and parsley. Mix well and enjoy with pappardelle pasta.
