Upgrade your classic English pudding with a luscious twist - the Queen of Puddings. Ditch the breadcrumbs for a jam-filled delight crowned with a fluffy meringue topping.
Ingredients:
  • 105g breadcrumbs
  • 1 tsp finely grated lemon zest
  • 5g (1 tsp) unsalted butter
  • 500ml milk
  • 3 eggs, separated
  • 75g caster sugar
  • 110g jam
Instructions:
  • In a heatproof bowl, combine breadcrumbs, zest, and butter. Heat milk over medium heat until just below boiling, then pour over the breadcrumb mixture. Let it stand for 15 minutes to absorb the milk and cool down.
  • Preheat your oven to 180°C for the perfect cooking temperature.
  • Whip egg yolks and 1/4 cup (55g) sugar with electric beaters until thick and pale, about 5 minutes. Combine with cooled milk mixture. Pour into four 1-cup (250ml) ramekins or ovenproof glass dishes, then bake on a tray for 25-30 minutes until custard is set without browning.
  • Beat the egg whites until soft peaks form, then gradually add the remaining sugar, whisking until stiff and glossy.
  • Spread each creamy custard with a luscious spoonful of melted jam, then generously top with fluffy egg whites. Bake until the meringue is golden brown, about 5 minutes. Enjoy warm and indulge in every blissful bite.
