Cherry queen of puddings

Fluffy meringue crowns luscious cherry filling.
Ingredients:
  • 375.00 ml fresh breadcrumbs
  • 2 tsp orange rind, finely grated
  • 20g butter, finely chopped
  • 515.00 gm milk
  • 3 eggs, separated
  • 161.25 gm caster sugar
  • 165.00 gm black cherry and vanilla jam
Instructions:
  • In a large heatproof bowl, combine breadcrumbs, orange rind, and butter. In a medium saucepan, heat the milk over medium heat until it simmers (do not boil). Pour the warm milk over the breadcrumb mixture and let it stand for 15 minutes to allow the breadcrumbs to absorb the milk.
  • Preheat your oven to 180C/160C fan-forced and generously grease 4 ovenproof dishes, each with a 1-cup capacity.
  • - With an electric mixer, whip egg yolks and 1/4 cup sugar until pale and fluffy, for about 6 to 8 minutes. Fold into the cooled breadcrumb mixture and distribute evenly among the prepared dishes. Place on a baking tray and bake for 25 to 30 minutes until just set. Let it stand for 5 minutes, then top with jam. - In the meantime, using the electric mixer, beat egg whites to soft peaks. Gradually add the remaining sugar until the mixture is stiff and glossy. Spread this meringue topping over each pudding and bake for 5 minutes until the meringue is lightly golden. Serve the warm puddings.
