Create customizable cheesy parcels for a fun DIY meal with friends.
Ingredients:
  • 1 large roast chicken, skin and bones removed, meat shredded
  • 1 x 425g can corn kernels, drained
  • 1 x 340g btl fire-roasted capsicum strips, drained, coarsely chopped
  • 1 bunch shallots, trimmed, thinly sliced
  • 2 bunches fresh coriander, leaves picked, coarsely chopped
  • 300g feta, crumbled
  • 750g coarsely grated reduced-fat cheddar
  • 30 (5 x 240g pkts) flour tortillas
  • Tomato & coriander salsa (see related recipe), to serve
  • Avocado & olive salsa (see related recipe), to serve
Instructions:
  • Arrange the chicken, corn, capsicum, shallot, coriander, feta, and cheddar on individual platters.
  • Preheat a large sandwich press. On a clean work surface, spray one side of a tortilla with olive oil spray. Add a sprinkle of cheddar, your favorite fillings, then more cheddar. Top with another tortilla and spray with olive oil.
  • Place the assembled tortilla in the sandwich press and toast until golden brown and heated through. Transfer to a cutting board and slice it into wedges. Repeat the process with the rest of the tortillas and fillings.
  • Enjoy with the flavorful salsas.
