Quesadillas with guacamole

Indulge in a deliciously melty cheese quesadilla - sinful yet irresistible!
Ingredients:
  • 2-3 avocados
  • 4-5 tomatoes
  • 2 red chillies
  • 1 handful spring onions
  • 1 good handful fresh coriander
  • sea salt
  • freshly ground black pepper
  • 1 squeeze lemon or lime juice
  • 2 big handfuls grated Cheddar or Red Leicester cheese

  • red or green chillies
  • tortillas
  • soured cream to serve
  • beer to serve
Instructions:
  • For guacamole, blend 2-3 ripe avocados, 2-3 deseeded tomatoes, a couple of deseeded red chillies, a handful of chopped spring onions, and a good amount of fresh coriander. Add more chopped tomatoes, a pinch of salt, and half a chopped avocado for a chunky texture. Season with sea salt, black pepper, and lemon or lime juice. If using store-bought guacamole, enhance with lemon juice, salt, and chilli. For quesadilla filling, mix grated Cheddar and/or Red Leicester cheese, sliced spring onions, chopped coriander, finely chopped red pepper, and deseeded red or green chillies. Spread half a handful between tortilla layers. Cook in a dry non-stick pan until crispy outside and gooey inside. Serve cut into quarters with guacamole, sour cream, and a beer. Optional: add grilled chicken, seafood, pork, shellfish, or grilled vegetables.
