Savor a delicious Mexican-inspired lunch dish.
Ingredients:
  • 2 Hass avocados, halved, stones removed, peeled, chopped
  • 1 tomato, quartered, seeds removed, cut into 5mm pieces
  • 1 shallot, trimmed, thinly sliced
  • 1 fresh red chilli, halved, deseeded, finely chopped
  • 1 lime, juiced
  • 82.50 ml chopped fresh coriander
  • 6.90 gm olive oil
  • 6 flour tortillas
  • 80g (1 cup) coarsely grated reduced-fat cheddar
  • 3 eggs
Instructions:
  • Roughly smash the avocado in a bowl. Mix in the tomato, shallot, chili, lime juice, and coriander. Stir until fully blended. Season with salt and pepper to taste.
  • In a large non-stick frying pan over medium heat, heat 1/2 teaspoon of oil until shimmering. Add 1 tortilla, sprinkle with 2 tablespoons of cheddar, and crack an egg in the center. Top with another 2 tablespoons of cheddar and another tortilla. Cook for about 3 minutes until golden, flip, and cook for another 3 minutes. Transfer to a plate and repeat the process with the remaining ingredients in 2 more batches.
  • Slice the quesadillas into quarters and enjoy alongside the fresh guacamole.
