Delicious quesadillas with Brie, ham, and fruity guacamole.
Ingredients:
  • 1 medium avocado, pitted, peeled and quartered
  • 1/2 small jalapeño chile, seeded, finely chopped
  • 1 small clove garlic, finely chopped
  • 2 tablespoons lime juice
  • 1/4 cup chopped fresh cilantro
  • 1/8 teaspoon salt
  • 1/2 medium mango, cut in half lengthwise, seed removed, peeled and diced
  • 6 tortillas from 1 package (11 oz) Old El Paso™ Flour Tortillas for Burritos (8 Count)
  • 1 round (6 to 7 oz) Brie cheese, cut into 1/8-inch strips (not wedges)
  • 1/4 lb thinly sliced cooked ham (from deli)
  • 1 tablespoon vegetable oil
Instructions:
  • Combine all guacamole ingredients in a food processor, except for the mango. Pulse the mixture 3-4 times until coarsely chopped. Transfer to a small bowl and gently fold in the mango. Set aside.
  • Place a generous amount of cheese and ham on one side of each tortilla. Gently fold the tortillas over the filling and press down to seal. Brush the tops of the tortillas with oil for a delicious golden finish.
  • 1. Preheat a 12-inch skillet over medium-high heat. 2. Lay down 3 quesadillas, oil sides down, in the skillet. 3. Brush the tops with half of the remaining oil. 4. Cook for 2 to 3 minutes, flipping once, until both sides are golden brown and the cheese is melted. 5. Repeat the process with the remaining quesadillas and oil. 6. Cut each quesadilla into 4 wedges and serve with guacamole.
