Cheese quesadillas with guacamole

Spicy avocado dip pairs perfectly with cheesy quesadillas.
Ingredients:
  • olive oil cooking spray
  • 6 flour tortillas
  • 125.00 ml grated light cheddar cheese
  • 3 avocados, halved, roughly chopped
  • 1 small red onion, finely chopped
  • 1 long red chilli, deseeded, finely chopped
  • 62.50 ml chopped fresh coriander leaves
Instructions:
  • Prepare delicious guacamole by mashing ripe avocado in a bowl. Mix in onion, chili, cilantro, lime juice, salt, and pepper. Stir well to combine all ingredients and set aside.
  • Prepare the frying pan by spraying with oil and heating it over medium heat. Layer 1 tortilla in the pan, sprinkle 2 tablespoons of cheese over it, then place another tortilla on top. Spray the top tortilla with oil. Cook for 1 to 2 minutes, pressing down firmly with a spatula until the base is golden. Invert a plate over the frying pan, flip the quesadilla onto the plate, then slide it back into the pan uncooked side down. Cook for another 1 to 2 minutes until golden. Transfer to a plate and repeat with the rest of the tortillas and cheese.
  • Slice quesadillas into triangular pieces and accompany them with fresh guacamole.
