Quiche Lorraine with creamy herb topping and roasted tomato

Upgrade mini quiches by topping them with sour cream and tomatoes for a gourmet touch.
Ingredients:
  • 12 Patties Quiches Lorraine
  • 12 cherry tomatoes, on the vine
  • 125g (1⁄2 cup) sour cream
  • 20.00 ml chopped fresh dill
  • 20.00 ml chopped fresh continental parsley
  • 20.00 ml chopped fresh chives
  • 1 garlic clove, crushed
  • 1 lemon, rind finely grated
Instructions:
  • Preheat oven to 175°C/155°C fan forced. Grease and line a baking tray. Arrange Patties Quiches Lorraine and tomatoes on the tray, spraying tomatoes with oil and seasoning. Roast together for 10-12 minutes until tomatoes are wilted. Once done, set aside to cool. Finish cooking quiches until golden and crisp following packet directions.
  • In a small bowl, mix together the sour cream, herbs, garlic, and lemon zest. Season to taste.
  • Let quiches cool for 5 minutes, then top each with a dollop of sour cream and a roasted tomato before serving.
