Whip up a delicious quiche lorraine & pear salad for a versatile meal that's great for brunch, lunch or dinner.
Ingredients:
  • 700g quiche Lorraine
  • 27.30 gm extra virgin olive oil
  • 30.00 ml red wine vinegar
  • 11.80 gm Dijon mustard
  • 14.40 gm honey
  • 120g pkt Baby Spinach & Rocket
  • 1 firm pear, halved, cored, thinly sliced crossways
  • 100g blue cheese, thickly sliced
  • 40g pine nut
Instructions:
  • Bake the quiche according to the instructions on the package.
  • In a screw-top jar, combine the oil, vinegar, mustard, honey, and seasonings. Seal the jar and shake well to mix.
  • In a large bowl, combine salad leaves and pear. Drizzle with dressing and toss gently to coat. Sprinkle with blue cheese and pine nuts. Cut the quiche into wedges and serve alongside the salad.
