Chef John shares his secret for crispy home fries: cool precooked fries before crisping in a hot pan for the perfect crunch.
Ingredients:
  • 3 large russet potatoes, peeled and quartered
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 0.25 teaspoon paprika
  • 1 pinch cayenne pepper, or to taste
  • 1 pinch garlic powder
  • 1 pinch onion powder
  • salt and ground black pepper to taste
  • 1 tablespoon chopped fresh chives
Instructions:
  • Place the potatoes in a single layer on a microwave-safe plate and cook on high until just tender, which should take about 4 minutes. Allow the potatoes to cool to room temperature before cutting them into bite-sized chunks.
  • In a nonstick skillet over medium-high heat, melt butter with olive oil until it turns golden brown. Swirl the pan, add potatoes, and shake to spread evenly. Season with paprika, cayenne, garlic powder, onion powder, salt, and pepper.
  • Continue tossing the potatoes until they develop a reddish-brown, crusty, and crispy edge, for about 10 to 12 minutes. Adjust heat to medium if they are cooking too fast. Sprinkle with fresh chives before serving.
