Ingredients:
  • 4 potatoes
  • 60ml olive oil
  • 60g butter or margarine
  • 125.00 ml tasty cheese, shredded
  • Sour cream, to serve
Instructions:
  • Heat your oven to 180C.
  • Place the potatoes in a microwave-safe dish and drizzle with a touch of water.
  • Microwave potatoes in 3-5 minute intervals (adjust for wattage) until easily pierced with a skewer or knife.
  • As the potatoes cook in the microwave, drizzle olive oil onto a baking tray and transfer it to the oven.
  • Carefully transfer the cooked potatoes to the heated tray and toss with tongs to ensure they are evenly coated in oil.
  • Bake until golden brown, about 20 minutes.
  • After the potatoes are cooked, cut them into quarters.
  • Top with butter, cheese, and a scoop of sour cream before serving.
