Quick and easy Instant Pot baked Idaho® potatoes for fluffy perfection in a fraction of the time!
Ingredients:
  • 1 cup water
  • 2 extra-large Idaho® Russet Potatoes
  • 1 teaspoon olive oil
  • generous pinch of salt
Instructions:
  • Pour water into the Instant Pot® or pressure cooker, ensuring the water level is lower than the rack or steamer basket.
  • Rinse and pat dry the potatoes, then pierce each one with a fork or sharp knife 2-3 times.
  • Coat each potato lightly with oil and generously sprinkle with salt.
  • 1. Place the potatoes in the steamer basket, secure the lid, and select high pressure cook setting for 16 minutes. For potatoes over 14 ounces, pressure cook for 20 minutes. Let the pressure naturally release for 10 minutes.
  • Allow the pressure to naturally release for 10 to 40 minutes following the manufacturer's instructions. Then, unlock and remove the lid.
