Quick and Easy Sicilian Meatloaf

Sicilian meatloaf: ground beef rolled with ham and Swiss cheese for a unique twist.
Ingredients:
  • 1.5 pounds lean ground beef
  • 0.5 cup dry bread crumbs
  • 1 (1 ounce) package dry onion soup mix
  • 0.25 cup barbecue sauce
  • 1 clove garlic, minced
  • 1 tablespoon all-purpose flour
  • ground black pepper to taste
  • 8 thin slices deli ham, or as needed
  • 1 cup shredded Swiss cheese, or as needed
  • 0.25 cup ketchup
  • 1 teaspoon mustard
  • 1 tablespoon brown sugar
  • 1 dash soy sauce
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and lay down a 24-inch sheet of parchment paper on your work surface.
  • Combine ground beef, bread crumbs, onion soup mix, barbecue sauce, garlic, egg, flour, and black pepper in a bowl until thoroughly mixed. Spread the meat mixture onto parchment paper, shaping it into a 10x16-inch rectangle. Leave a 1-inch border around the edges and layer ham slices over the meat, then sprinkle Swiss cheese on top.
  • Lift one edge of the meat rectangle using the parchment paper, then gently roll the meat over the filling. Ensure edges and ends are sealed tightly. Place the meatloaf in a 9x13-inch baking dish, and remove the parchment paper.
  • Roast in the oven already warmed up for 45 minutes.
  • Combine ketchup, mustard, brown sugar, and soy sauce in a bowl until the sugar dissolves. Spread the mixture over the meatloaf and bake for an additional 15 minutes until the beef is fully cooked. Use an instant-read thermometer to confirm the beef reaches at least 160 degrees Fahrenheit (70 degrees Celsius).
