Quick Chicken with Asparagus and Provolone

Cheesy breaded chicken with savory chicken broth, topped with melted Provolone cheese and flavorful canned asparagus.
Ingredients:
  • 4 skinless, boneless chicken breast halves
  • 5 tablespoons olive oil
  • 2 eggs, beaten
  • 1 cup Italian-style dry bread crumbs
  • 1 (14.5 ounce) can chicken broth
  • 1 (10 ounce) can asparagus, drained
  • 4 slices provolone cheese
Instructions:
  • In a 2-inch deep skillet, heat oil until shimmering. Dip chicken in beaten egg and coat with bread crumbs. Brown chicken on both sides in the skillet.
  • Once the chicken has achieved a golden brown color, pour in the broth and evenly arrange the asparagus over the chicken. Top each chicken piece with a slice of cheese.
  • Cook the chicken in a covered skillet over medium heat for 15 minutes, or until it is cooked through and no longer pink inside.
