Quick coconut cream rice with makrut lime recipe

Make a quick and cozy microwave dessert in just 10 minutes.
Ingredients:
  • 250g packet microwave express white rice
  • 270ml can coconut milk
  • 128.75 gm milk
  • 1 tsp vanilla bean paste
  • 4 makrut lime leaves, halved
  • 125.00 ml grated palm sugar (see notes)
  • Roasted coconut chips, to serve
  • Passionfruit, to serve
  • Kiwi fruit, to serve
  • Lime wedges, to serve
Instructions:
  • Prepare fluffy and perfectly cooked rice by microwaving following the instructions on the packet.
  • In a heavy-based saucepan, combine coconut milk, milk, vanilla, makrut lime leaves, and palm sugar. Simmer over medium-high heat until it reaches a gentle bubbling stage. Then, reduce the heat to medium-low and continue to simmer, stirring occasionally, until the sugar completely dissolves, for about 2 minutes.
  • Add the rice and stir gently. Let it simmer for 5 to 7 minutes until it thickens. Remove and throw away the lime leaves. Serve the dish in bowls, and garnish with passionfruit and coconut. Accompany with kiwi fruit and lime wedges.
