Mediterranean couscous: Onion, carrot, and raisin blend for a vibrant, speedy side.
Ingredients:
  • 0.25 cup butter
  • 2 carrots, diced
  • 1 onion, chopped
  • 0.5 cup chicken broth
  • 1.5 cups water
  • 1.5 cups uncooked couscous
  • 0.25 cup raisins
Instructions:
  • In a large saucepan over medium heat, melt the butter. Add the carrots and onion, stirring occasionally until the carrots start to soften and the onion turns translucent, around 5 minutes. Pour in the chicken broth and water and bring it to a boil. Stir in the couscous, ensuring it's well mixed to prevent lumps. Cover the pan, remove it from the heat, and let the couscous stand covered until the water is absorbed, about 5 minutes.
  • Combine the raisins into the mixture and serve while still piping hot.
