Quick and delicious salad with raisins, cherry tomatoes, garbanzo beans, and tangy feta cheese.
Ingredients:
  • 3 cups vegetable broth or Progresso™ chicken broth (from 32-oz carton)
  • 2 cups uncooked couscous
  • 1/2 cup raisins or currants
  • 1/4 teaspoon pepper
  • 1 small tomato, chopped (1/2 cup)
  • 1 can (15 oz) Progresso™ chickpeas (garbanzo beans), drained, rinsed
  • 1/3 cup crumbled feta cheese
Instructions:
  • Bring the broth in a 3-quart saucepan to a boil. Stir in all the other ingredients except for the cheese, then remove from heat.
  • Allow the dish to sit for approximately 5 minutes until the liquid is absorbed, then stir delicately. Top each portion with a sprinkle of cheese before serving.
