Ingredients:
  • 80ml satay sauce
  • 150ml light coconut milk
  • 4 chat potatoes, cut into 1cm-thick slices
  • 1 large carrot, peeled, sliced on the diagonal
  • 150g baby green beans, trimmed
  • 150g firm tofu, cut into small cubes
  • 1/2 Chinese cabbage, shredded
  • 200g bean sprouts
  • 1 long red chilli, thinly sliced on the diagonal, to serve
Instructions:
  • Combine the satay and coconut milk in a small saucepan over low heat, stirring gently until warmed through. Keep warm over very low heat.
  • Steam the potatoes in a large steamer for 3 minutes. Then, add the carrot and beans and steam for an additional minute.
  • Steam the tofu, cabbage, and bean sprouts for 1-2 minutes until the cabbage wilts slightly.
  • Arrange the steamed vegetables and tofu on 4 plates, generously coat with the flavorful satay coconut sauce, and sprinkle with chopped chilli for a vibrant finish.
