Transform pasta into a veggie-packed delight by incorporating 500g of assorted vegetables for a versatile and nutritious meal.
Ingredients:
  • 6 spring onions
  • 1 leek
  • 1 large handful of tenderstem broccoli spears
  • olive oil
  • 2 cloves of garlic
  • 100 g frozen spinach
  • 2 large handfuls of frozen peas
  • 450 g dried pasta (we used penne)
  • 50 g Parmesan cheese Grana Padano or vegetarian alternative, plus extra to serve
  • extra virgin olive oil
  • optional: fresh herbs such as basil, parsley or mint
Instructions:
  • Prepare the vegetables: trim and slice the spring onions, leek, and broccoli stalks. Set aside the broccoli tips. Heat olive oil in a large shallow casserole pan, then add the prepared vegetables along with chopped garlic, frozen spinach, peas, salt, and pepper. Cook for 10-15 minutes until soft. In another pot, cook pasta as instructed, adding broccoli florets in the last 2 minutes. Grate the Parmesan cheese. Reserve 200ml of pasta water and mix it with the veggie mixture. Choose to keep the sauce chunky, blend it smooth, or go in between with a hand blender. Drain the pasta and broccoli, then combine with the sauce. Finish with extra virgin olive oil, Parmesan, and fresh herbs. Serve with extra Parmesan and a side salad. Enjoy!
