Quick haloumi and grain salad

Vegetarian salad with haloumi, nuts, rice, and quinoa.
Ingredients:
  • Olive oil spray
  • 250g haloumi, thinly sliced
  • 250g pkt Brand Brown Rice & Quinoa
  • 1 small red onion, thinly sliced
  • 1 bunch radishes, thinly sliced
  • 60g pkt Baby Rocket
  • 125.00 ml mint leaves
  • 125.00 ml flat-leaf parsley leaves
  • 40g pecan
  • 36.40 gm olive oil
  • 20.00 ml red wine vinegar
  • 1 garlic clove, crushed
Instructions:
  • Prepare a medium frying pan by lightly coating it with oil. Pan-fry the haloumi over medium heat for 1-2 minutes on each side, or until it turns golden brown.
  • Heat the rice mixture in the microwave according to the package instructions.
  • In a large bowl, mix the haloumi, rice mixture, onion, radish, rocket, mint, parsley, and pecans. In a screw-top jar, combine the oil, vinegar, and garlic by shaking well. Season with salt and pepper. Pour the dressing over the salad and toss gently. Serve right away.
