Quick and fun Hawaiian haystacks - a delicious way to enjoy leftover rice, chicken, veggies, and coconut in under 30 minutes for a weeknight meal.
Ingredients:
  • 2 (10.5 ounce) cans cream of chicken soup
  • 3 cooked chicken breasts, cut into bite-sized pieces
  • 0.5 cup milk, or more as needed
  • 4 cups cooked rice
  • 1 (5 ounce) can chow mein noodles
  • 1 (8 ounce) can pineapple tidbits, drained
  • 1 cup shredded Cheddar cheese
  • 3 stalks celery, chopped
  • 2 green bell peppers, chopped
  • 3 green onions, chopped
  • 0.5 cup flaked coconut
  • 0.5 cup slivered almonds
  • 1 teaspoon soy sauce, or to taste
Instructions:
  • Combine chicken soup and chicken in a saucepan, then stir in milk until it reaches a gravy-like consistency. Cook chicken sauce over medium heat until smooth and heated through, about 5 to 10 minutes.
  • On 8 plates, elegantly arrange 1/2 cup of rice, topped with chow mein noodles, flavorful chicken, juicy pineapple, savory Cheddar cheese, crunchy celery, fresh green peppers, zesty green onions, tropical coconut, toasted almonds, and a drizzle of soy sauce on each.
