Create your own gourmet vanilla extract with a sous vide circulator in just one night.
Ingredients:
  • 2 cups vodka
  • 3 vanilla bean, split lengthwise and halved
Instructions:
  • Fill a large pot with water and insert a sous vide circulator, setting the temperature to 140 degrees F (60 degrees C) based on the manufacturer's instructions.
  • Combine vodka and vanilla beans in a pint-size sterilized Mason jar, seal finger-tight, fully submerge in water, and process for a minimum of 8 hours.
  • Transfer the jar to a cool, dark cupboard, remembering to give it a gentle shake now and then. The extract is ready for immediate use, but its flavor will improve over time.
