Refreshing jicama slaw with apple, cabbage, and tangy rice vinegar, cilantro, and lime dressing.
Ingredients:
  • 0.5 small head red cabbage, cored and thinly sliced
  • 2 sweet apples, cut into matchsticks
  • 1 small jicama, peeled and cut into matchsticks
  • 1 cup matchstick-cut carrots
  • 0.5 cup diced red onion
  • 6 tablespoons olive oil
  • 3 tablespoons rice vinegar
  • 3 tablespoons fresh lime juice
  • 0.25 bunch fresh cilantro, chopped
  • 1 teaspoon white sugar
  • 0.5 teaspoon red pepper flakes
  • 0.25 teaspoon cayenne pepper
  • 0.25 teaspoon ground black pepper
Instructions:
  • Combine vibrant red cabbage, crisp apples, crunchy jicama, sweet carrots, and flavorful red onion in a spacious bowl.
  • In a small bowl, combine olive oil, rice vinegar, lime juice, cilantro, sugar, salt, red pepper flakes, cayenne pepper, and ground black pepper. Mix until the dressing is smooth. Pour the dressing over the cabbage mixture and toss to combine. Allow the slaw to sit for about 10 minutes for the flavors to meld.
