Quick lamb casserole

Quick and easy 20-minute rich lamb casserole.
Ingredients:
  • 4 lamb leg chops
  • 1 small bunch spring onions, trimmed
  • 200g small button mushrooms
  • 400g can chopped tomatoes
  • 61.88 gm dry red wine
  • 44.40 gm tomato paste
  • 40.00 ml chopped fresh flat-leaf parsley leaves
  • 82.50 ml pitted black olives
  • Soft polenta, to serve (see note)
Instructions:
  • In a saucepan over medium-high heat, sizzle the lamb in two batches for 2 minutes per side until beautifully browned. Set aside. In the same pan, sauté onions and mushrooms for 2 minutes until lightly golden.
  • Add the lamb back to the pan along with tomato, wine, and tomato paste. Let it come to a boil, then lower the heat to a simmer. Cover and simmer for 5 minutes. Remove the lid and continue to simmer uncovered for another 5 minutes until the sauce thickens slightly. Mix in parsley and olives. Serve with soft polenta.
