Quick and cozy lamb tagine ready in just 40 minutes - perfect for a comforting meal tonight!
Ingredients:
  • 36.40 gm olive oil
  • 500g lamb leg steaks, thinly sliced
  • 1 medium red onion, cut into wedges
  • 5.00 gm paprika
  • 2.50 gm ground cumin
  • 57.20 gm honey
  • 400g orange sweet potato, peeled, cut into 2cm cubes
  • 1 cinnamon stick
  • 255.00 gm beef stock
  • 6 fresh dates, pitted, halved
  • Couscous (see note), to serve
  • Fresh coriander leaves, to serve
  • Roasted slivered almonds, to serve
  • Paprika, extra, to serve
Instructions:
  • In a large saucepan over medium-high heat, warm 1 tablespoon of oil. Brown the lamb in two batches for about 2 minutes each until it is golden on all sides. Transfer the lamb to a plate.
  • Heat the rest of the oil in a pan, then add the onion and cook for 3 minutes until softened. Stir in paprika, cumin, and honey and cook for another minute until fragrant. Toss in the potato and cook for 1 more minute until coated. Pour in the beef stock and add the cinnamon stick. Bring to a boil, then simmer covered for 10 minutes until the sauce slightly thickens. Finally, add the dates and simmer for 5 more minutes until the potato is tender.
  • Combine the lamb with the potato mixture and cook for 3 minutes, stirring occasionally until the lamb reaches your desired doneness. Spoon the couscous into bowls, top with the lamb mixture, and garnish with coriander, almonds, and paprika before serving.
