Mustard greens cooked fast with sesame oil, rice wine; a zesty Asian side dish.
Ingredients:
  • 1 tablespoon sesame seeds
  • 1 teaspoon Asian (toasted) sesame oil
  • 6 cups washed and chopped mustard greens
  • 0.25 cup water
  • 1 teaspoon minced garlic, or to taste
  • 1 tablespoon soy sauce
  • 2 teaspoons Japanese rice wine (mirin) vinegar
  • 1 teaspoon sake
  • 1 teaspoon white sugar
Instructions:
  • Toast sesame seeds in a large skillet over medium heat, stirring constantly until golden brown and crackling, about 1 to 2 minutes. Quickly transfer to a bowl to halt cooking. Keep seeds aside.
  • Heat the sesame oil in a hot skillet until it just begins to smoke quickly. Add the mustard greens and water, then gently toss until wilted and reduced, about 2 minutes. Stir in garlic, soy sauce, rice wine vinegar, sake, and sugar.
  • - Bring the mixture to a boil, stir until sugar has dissolved, cover, and simmer until greens are tender, 10 to 15 minutes. - Optionally, for a thicker sauce, remove greens, simmer liquid to desired thickness, then return greens to the skillet, toss with pan juices, and sprinkle with toasted sesame seeds.
