Whip up a quick and hearty lentil soup with crispy bacon and nutritious kale.
Ingredients:
  • 18.20 gm olive oil
  • 1 brown onion, finely chopped
  • 1 carrot, peeled, finely chopped
  • 2 celery sticks, finely chopped
  • 3 bacon rashers, finely chopped
  • 1 tsp finely chopped thyme
  • 1l chicken
  • 400g can lentils, rinsed, drained
  • 140g pkt chopped kale
Instructions:
  • In a large saucepan over medium heat, warm the oil. Mix in onion, carrot, celery, bacon, garlic, and thyme. Sauté for 10 minutes until the onion is softened. Pour in the stock and bring to a boil. Simmer for 10 minutes until vegetables are tender.
  • Combine the lentils and kale into the pot and bring to a simmer. Immediately ladle the hot soup into serving bowls and serve.
