Whip up a quick and delicious pasta dish for a stress-free family dinner tonight!
Ingredients:
  • 350g feta
  • 500g large shell pasta
  • 200g pancetta or bacon, chopped
  • 400g can brown lentils, drained, rinsed
  • 250.00 ml basil leaves, torn
  • 40.00 ml sherry vinegar
  • 23.40 gm dijon mustard
Instructions:
  • Separate feta from oil, setting aside 100ml. Prepare pasta according to package instructions in a pot of boiling salted water until al dente. Drain and place in a large bowl. Drizzle with 1 tablespoon of reserved oil, mix well, and let it cool down.
  • In a hot frying pan, crisp pancetta for 4 minutes while stirring often. Remove from heat and combine with lentils, basil, and feta in the pasta.
  • In a jug, combine the remaining 1/3 cup of reserved oil, vinegar, and mustard. Season with salt and pepper, then stir well. Pour the mixture over the pasta and toss to coat evenly. Serve and enjoy!
