Enjoy a quick and delicious Spanish-inspired seafood rice skillet in just 20 minutes.
Ingredients:
  • 1/4 cup margarine or butter
  • 1 1/3 cups uncooked instant rice
  • 1 medium onion, finely chopped (1/2 cup)
  • 1 small green bell pepper, chopped (1/2 cup)
  • 2 cloves garlic, finely chopped
  • 1 1/2 cups water
  • 2 cans (8 ounces each) tomato sauce
  • 1 can (6 1/2 ounces) minced clams, drained
  • 4 ounces frozen cooked salad shrimp, thawed
  • Pinch of saffron or ground turmeric, if desired
  • Chopped fresh parsley, if desired
Instructions:
  • Melt margarine in a 10-inch skillet over medium heat. Saute rice, onion, bell pepper, and garlic in the melted margarine until the rice is lightly browned, stirring occasionally.
  • Add the rest of the ingredients and bring to a boil. Lower the heat and let it simmer without a lid for approximately 5 minutes until the rice is cooked to perfection.
